Local Firefighter gets a grilling from Tyler Florence

or rather a grilling lesson from Chef Florence (be still my heart) in the July issue of Sunset Magazine. He was one of three folks brought together to master the art of grilling and to overcome their past...well...charbroiled disasters.
Lesson 2: Ribs

The student:
Santa Barbara firefighter Matt Osborne.

The disaster: Osborne incinerated some ribs one Super Bowl at the firehouse while leaving them unattended to watch the game with his coworkers. The next morning, he tossed the smoker’s mangled remains into the station’s dumpster and nearly set it on fire.

The hope: Redemption. "The entire event still haunts me today," he wrote. "It has been six years and the guys still bring it up."
I think that perhaps Mr. Osborne has just been to busy fighting fires here in Santa Barbara to master the rib thing. Let's hope that he has plenty of time to work the coals over a grill this summer instead of working the embers on our hillsides.

Such a Tweet

There is something very delicously poetic about learning how to cook a dish with Tyler Florence via TWITTER.

A few highlights...
Through out Europe, The term "Scampi" takes a few left turns....

We'll start off with the shrimp, I think I went overboard with the amount, but hay, what's new. 5lbs for 7 people...

Here is the method bit I love. Scampi is all about the garlic and we're going to coax the sweet flavor out...

Now here is where you could blow it. Don't salt right away and don't stir like a maniac...

The salt will make the shrimp weep and will ruin our beautiful crust and stirring will create steam that will do the same thing.
...

Color equals flavor and we want to build a crisp crust on the shrimp. so leave it alone...

This is an Italian American dish, so Pinot Grigio, buttery Chardonnay whatevs. As long as it's something you want to drink...

Tyler Florence - culinary whirling dervish

When does this guy ever sleep?

...Consider what he does when he's not producing segments of "Tyler's Ultimate." Having just completed six holiday special segments for the Food Network, he is promoting two lavish cookbooks that hit the shelves this week.

Plus there's the construction of his latest restaurant, Bar Florence, in San Francisco, set to open in the spring. And readying Tyler Florence wine for wide distribution next year. And adding high-end cutlery to his personal line of culinary gear. And expanding retail operations beyond his flagship store. - San Jose Mercury New

he's the "ultimate" with me! (oh...and his ultimate recipes aren't bad either...)

As if there weren't enough cooking magazines...

FoodNetwork is jumping into the cooking mag fry pan.
Hearst Magazines and the Food Network are forging ahead with their new food title. Food Network Magazine, as they’re calling it, will represent the array of the network’s celeb chefs, from Paula Deen to Ina Garten to Bobby Flay. The first of two test issues is slated to come out in October, with a second to follow in January, said Michael Clinton, executive vp, chief marketing officer and publishing director for Hearst. - MediaWeek
And speaking of FoodNetwork, Tyler Florence, now that he is a citizen of the United State of California, has been picked to head up a department (or two) at Copia: The American Center For Wine, Food and the Arts in Napa.
According to a published report last week, Florence is being tapped as the center’s dean of culinary studies, responsible for all food education and culinary instruction as well as for the online food and wine content on copia.org. - The Press Democrat
I don't know if Tyler's presence will help the financially troubled Food/Wine Mecca, but I certainly hope so. Wonder if we'll be seeing him on Copia TV, too.
Creditors are taking control of the troubled insurer that guaranteed the $77 million in bonds issued by a California state bank for Napa's Copia: the American Center for Wine, Food and the Arts.

...I-Bank, a tiny, state-owned institution, endorsed a $77 million bailout of Copia last year even as the museum was insolvent and facing IRS accusations of violating its nonprofit status with too many for-profit activities. I-Bank also had authorized the first bond offering for Copia in 1999, for $70 million, which allowed construction of the center's lavish buildings and grounds.

As a third party, I-Bank maintains it is not liable for the bonds, but its former chairman expressed concern about Copia's financial instability before the second round of bonds were approved. That approval hinged on ACA's insurance.- SacBee
