The image this story leaves in my mind

is bad enough....the thought that people knew this was happening and did nothing just sickens my soul.
Dead mice and rodent droppings were found throughout a Texas plant run by a company whose peanut products caused one of the biggest food recalls in U.S. history, food inspectors reported on tuesday. - Reuters

Close the Loopholes

NOW.
Lawmakers reacted angrily Thursday when told that food makers and state safety inspectors are allowed to keep tests results secret. That keeps federal health officials in the dark even when products have been contaminated by salmonella or other dangerous bacteria.

"I'd like to see some people go to jail," Sen. Patrick Leahy, D-Vt., said during a Senate Agriculture Committee hearing on a deadly salmonella outbreak linked to a Georgia peanut plant that has sickened more than 550 people and killed at least eight. - AP
I agree with the honorable Senator Leahy. People need to go to jail.

Let's talk about another recall

recalling the President of Peanut Corp. from the Peanut Stardards Board.

The president of the peanut company linked to a nationwide salmonella outbreak serves on an industry advisory board that helps the U.S. Department of Agriculture set quality standards for peanuts.

Stewart Parnell, president of Peanut Corp. of America, based in Lynchburg, Va., was first appointed to the USDA’s Peanut Standards Board in July 2005 and was reappointed in October for a second term that runs until June 2011, according to the USDA. -

Criminal Investigations have begun

against the Peanut Corporation of America.

Local eyewitness news reported that authorities began a criminal investigation into the Peanut Corporation of America’s (PCA) Georgia facility because of the link to the salmonella outbreak.

Throughout their investigation in the Georgia plant, FDA found a complete mess: a leaking roof, mold, and roaches.

This investigation into PCA comes after Minnesota officials found salmonella in an open tub of peanut butter manufactured by PCA. More information led to FDA finding PCA already had salmonella problems; however PCA continued to sell the products! -

I don't know if I'm brave enough

to attempt these cookies highlighed in the Daily Herald of the Chicago area.....but they ARE intriguing.....

Peanut Brittle Bacon Cookies

1 cup (2 sticks) butter
1 cup brown sugar
1 cup granulated sugar
2 eggs
½ cup smooth peanut butter
2 cups all-purpose flour
1 teaspoon salt
1 tablespoon baking powder
1 cup peanut brittle, cracked into ½-inch pieces
1½ cups bacon, crisply cooked and cut into ½-inch pieces

Heat oven to 350 degrees.

Cream together butter and sugars until light and fluffy. Mix in eggs, one at a time. Add peanut butter and mix until incorporated.

In a separate bowl, sift together flour, salt and baking powder. Add the dry ingredients 1 cup at a time to the butter mixture, scraping the bowl as needed. Stir in peanut brittle and bacon.

Roll dough into ½-inch balls and place on parchment-lined cookie sheets. Flatten each cookie with the palm of your hand to about 1 inch in diameter. Bake about 15 minutes, or until the edges begin to lightly brown. Remove to a cooling rack to cool completely. Store in an airtight container up to one week.

Makes about five to six dozen cookies.


But...I shouldn't be so quick to judge as I tasted amazing chocolate down in Sandy Eggo at the Fancy Food Trade Show. It was from Vosges (a Chicago Chocolatier) and was quite unusually delicious.... "Mo's Bacon Bar",

The treat, recently introduced, features crumbles of applewood smoked bacon and flecks of Alder wood smoked salt coated in 41-percent cacao milk chocolate. Think of a what a Nestle Crunch bar might be like if you substituted smoky crispy bacon bits for the puffed rice and gave it a nice little salty kick. - The Stew (A Chicago Tribune blog)
Unusual combinations of bacon with some some other unexpected ingredient....guess it's a "mid-west" thing...but oh, so good!
